Seared Salmon with sun dried tomatoes, artichoke and capers
Crispy on the outside and tender on the inside this pan seared salmon is combined with tomatoes, artichoke and capers for a fantastic taste.

- 2 salmon fillets
- 2 cloves of garlic finely sliced
- 75g jarred sun dried tomatoes
- 75g jarred roasted artichokes
- 30g capers
- 2 large handfuls of spinach
- 200ml of single cream
- Handful of fresh basil roughly chopped
- olive oil
- salt & pepper

Step 1
Season the salmon with some salt and pepper then sear salmon on skin side in hot pan until crispy - remove to plate
Step 2
In the same pan sauté the garlic, sun-dried tomatoes, artichokes and capers in a little olive oil
Step 3
Add the spinach after 4 minutes and wilt
Step 4
Add the salmon back into the pan skin side up along with the cream and simmer away for 5-7 minutes until the salmon is just cooked through.
Finish with the basil and a good pinch of salt and pepper.
