- 2 cups of cooked rice, preferably day-old
- 1 tablespoon vegetable oil
- 2 garlic cloves, minced
- 1 small onion, diced
- 1 cup mixed seafood (shrimp, scallops, squid), cleaned and chopped
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1/2 cup frozen peas and carrots, thawed
- 2 eggs, lightly beaten
- 2 green onions, chopped
- Salt and pepper to taste
- Optional: a splash of sesame oil for extra flavor
