The sweet rich flavour of yellowtail is very popular in Japanese sushi bars, where it is known as hiramasa. We are selling skinless boneless strips, which you will slice yourself for final presentation. On this page, we are selling the 'belly' cut in both thick and thin packs. The distinction between thick and thin is quite minor but means something to those who enjoy this line. As an estimate, the thick is around 2cm think whilst the thin is 1cm thick. The belly cut has a higher oil content than the loin sashimi strips we sell here.
