In France, this is the famous Palourdes, in Portugal and Spain, the Ameijoa or Almeja and in Italy, Vongole. It looks pretty nondescript, but gourmets regard it as one of the best small clams. About the size of a cockle, but with an appreciably meatier interior and the most fabtastic flavour.
Because frozen clams are already dead, whether they open during cooking is random. Don’t worry, if any stay closed, just give them a quick twist and they’ll pop right open
Availability is variable so we may also offer the similar Japanese (or Manila) clam. It looks almost identical but it’s not in quite the same class, taste-wise. 700g will give two to four servings.
