Conger Eel with Cider 

Serves 4


  • 4 conger eel steaks
  • 2 tbsp olive oil
  • 1 onion, chopped
  • Flour for coating
  • Dry cider
  • Salt and pepper
  • Thyme, parsley, bay leaf
  • 2 sliced eating apples


  1. Heat oven to 400F / 200C / Gas 6 . Heat the oil in a wok or frying pan and cook the onion until soft.
  2. Dip the fish steaks in the flour and add to the pan, browning quickly on each side.
  3. Place the apple and onion into an ovenproof dish (not too large) and the steaks over. Pour over sufficient cider to come halfway up the side of the steaks. Season with salt and pepper. Add thyme, parsley and bay leaf.
  4. Bake for 15-20 minutes, basting halfway through.
