Mackerel with Cheese & Parsley
Serves 4


  • 8 mackerel fillets
  • 125ml/5 fl oz olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, crushed
  • 2 tbsp chopped parsley
  • 100g/4oz dry breadcrumbs
  • 50g/2oz grated cheese
  • Large pinch salt
  • Dash black pepper
  • 1 tbsp butter


  1. Combine oil, lemon juice, half crushed garlic and half the parsley and mix well to a sauce.
  2. Mix breadcrumbs, cheese, remaining garlic, salt and seasoned pepper for coating.
  3. Heat butter in a pan, dip fish in sauce then into coating and place in the pan.
  4. Cook slowly, turning often and basting with the sauce, for 10-15 mins when fish should become flaky.
  5. Serve, sprinkled with remaining parsley.
