Mackerel with Cheese & Parsley
Serves 4
Ingredients
- 8 mackerel fillets
- 125ml/5 fl oz olive oil
- 2 tbsp lemon juice
- 2 cloves garlic, crushed
- 2 tbsp chopped parsley
- 100g/4oz dry breadcrumbs
- 50g/2oz grated cheese
- Large pinch salt
- Dash black pepper
- 1 tbsp butter
Method
- Combine oil, lemon juice, half crushed garlic and half the parsley and mix well to a sauce.
- Mix breadcrumbs, cheese, remaining garlic, salt and seasoned pepper for coating.
- Heat butter in a pan, dip fish in sauce then into coating and place in the pan.
- Cook slowly, turning often and basting with the sauce, for 10-15 mins when fish should become flaky.
- Serve, sprinkled with remaining parsley.
