Stir Fry of Prawns and Cashew Nuts

Ingredients
- 1 onion, peeled and chopped
- 4 courgettes, sliced
- 100g/4oz mushrooms, sliced
- 2 tbsp sunflower oil
- 225g/8oz beansprouts
- Juice of 1 lemon
- 1 tbsp soy sauce
- 75g/3oz cashew nuts
- 225g/8oz peeled prawns
Method
- Fry the onion, courgettes and mushrooms in the oil for about 10 minutes.
- Stir in the beansprouts, lemon juice, soy sauce, cashew nuts and prawns and cook for a further 5 minutes.
