Anchovy and Pesto Toasted Sandwich
This Anchovy and Pesto Grilled Cheese Sandwich is a delicious recipe that utilizes the rich flavour and nutritional benefits of our ortiz tinned anchovy fillets. These small, oily fish are packed with protein, omega-3 fatty acids, and other essential nutrients that make them a healthy addition to any diet.
What you’ll need
- 2 slices of sourdough bread
- 2 tbsp of pesto
- 2-3 tinned ortiz anchovy anchovy fillets
- grated mozzarella cheese
- grated parmesan cheese
- 1 tbsp of butter
- zest of 1 lemon
- black pepper

Step 1
Spread one tablespoon of pesto on one side of each bread slice.
Step 2
Add a thick layer of mozzarella cheese to each slice and top one of the slices with the anchovy fillets.
Step 3
Shower this half with a good amount of lemon zest and a serious grind of black pepper, and layer the two pieces of bread on top of each other, securing the cheesy goodness between the two slices of bread.
Step 4
Spread butter on the outside of each bread slice and sprinkle on some grated parmesan, grill the sandwich on a skillet over medium heat until the cheese is melted and the bread is golden brown on both sides.
