Anchovy and Pesto Toasted Sandwich

 

This Anchovy and Pesto Grilled Cheese Sandwich is a delicious recipe that utilizes the rich flavour and nutritional benefits of our ortiz tinned anchovy fillets. What you’ll need

  • 2 slices of sourdough bread
  • 2 tbsp of pesto
  • 2-3 tinned ortiz anchovy anchovy fillets
  • grated mozzarella cheese
  • grated parmesan cheese
  • 1 tbsp of butter
  • zest of 1 lemon
  • black pepper

Spread one tablespoon of pesto on one side of each bread slice.

Add a thick layer of mozzarella cheese to each slice and top one of the slices with the anchovy fillets.

Shower this half with a good amount of lemon zest and a serious grind of black pepper, and layer the two pieces of bread on top of each other, securing the cheesy goodness between the two slices of bread.

Spread butter on the outside of each bread slice and sprinkle on some grated parmesan, grill the sandwich on a skillet over medium heat until the cheese is melted and the bread is golden brown on both sides.
