Crispy baby octopus with chilli and pineapple salsa
Crispy baby octopus deep fry with a refreshing pineapple salsa. A lovely recipe to share or the perfect starter for a summer dinner.BUY BABY OCTOPUS
What you’ll need
- 400g baby octopus
- 200g self raising flour
- tin of pineapple in juice
- 1 red chilli
- Handful of coriander
- 3 limes
- vegetable oil for frying
Half fill a large saucepan with vegetable oil and heat.
Put the flour in a large bowl with a good pinch of salt and pepper and toss the octopus in the flour until well coated.
Finely dice the pineapple, chilli and coriander and combine with the juice of 1 lime in a small bowl
When the oil is hot shake the excess flour off the octopus and place in the oil in batches - fry for 1-2 mins until lightly golden and crispy
Serve immediately with the pineapple salsa and lime wedges
