Mediterranean Char-Grilled Octopus

- 1 large octopus, cleaned and tentacles separated
- 1 lemon, zest and juice
- 4 tablespoons extra virgin olive oil
- 2 cloves garlic, minced
- A handful of fresh parsley, finely chopped
- A sprig of fresh thyme, leaves picked
- Sea salt flakes, to taste
- Freshly cracked black pepper, to taste
- Additional lemon wedges, for serving

Step 1
Prepare your octopus by boiling it in a large pot of salted water until tender, usually about 40-60 minutes. Once cooked, drain and let it cool.
Step 2
Preheat your grill or griddle pan to a high heat.
Step 3
In a bowl, combine lemon zest, lemon juice, half of the olive oil, garlic, parsley, and thyme to create the dressing. Season with sea salt and black pepper.
Step 4
Brush the octopus tentacles with the remaining olive oil and season them with salt and pepper.
Step 5
Place the tentacles on the hot grill and sear for about 2-3 minutes on each side, until they have a nice charred exterior.
Step 6
Slice the grilled octopus tentacles into bite-sized pieces and arrange them on a serving plate.
Step 7
Drizzle the lemon-herb dressing generously over the warm octopus.
Step 8
Serve immediately with additional lemon wedges on the side.
