Salmon Crudo with Raspberries

 

Salmon with raspberries? Just trust us on this one. You'll be pleasantly surprised, Crudo literally means “raw,” Unlike Sashimi where the fish is slightly dipped in soy sauce to finish off the dish, Crudo is topped with olive oil, citrus, or some type of vinaigrette to enhance the dish.

What you’ll need

  • 125g Raspberries
  • Zest and juice of 1 lemon & 1 lime
  • 2 tbps Extra virgin olive oil
  • 300g sashimi-grade salmon, finely sliced

Salmon Crudo with Raspberries
Step 1

Place half the raspberries in a bowl. Add lemon and lime zest and juice, and a pinch of salt, then mash up with a fork until well combined. Press mixture through a sieve set over a bowl, discarding solids. Add oil to the juice mixture and whisk until well combined. Arrange salmon on a serving platter. Spoon over dressing, then scatter with the remaining raspberries. Serve immediately.
