Spiced Wahoo with Warm Couscous & Roasted Veg

- 2 wahoo steaks
 - 1 tsp ground cumin
 - 1 tsp smoked paprika
 - ½ tsp chili flakes (optional)
 - Salt & pepper
 - Olive oil
 - 1 lemon (zest & juice)
 - 120g couscous
 - 150ml hot stock (veg or chicken)
 - Handful fresh herbs (parsley, mint)
 - Drizzle olive oil
 - 1 courgette (zucchini), sliced
 - 1 red pepper, sliced
 - 1 small red onion, sliced
 
Let's Cook!
Step 1
Toss courgette, pepper & onion with olive oil, salt, pepper.
Step 2
Roast at 200°C (fan 180°C) for 15–20 min.
Step 3
Put couscous in a bowl, pour over hot stock, cover with plate.
Step 4
After 5 min, fluff with fork, stir in herbs, olive oil & lemon zest.
Step 5
Rub wahoo with spices, salt, pepper, drizzle of olive oil.
Step 6
Pan-sear on medium-high: ~3 min per side until golden & just cooked.
Step 7
Squeeze over lemon juice to finish.
Step 8
Couscous on base, scatter roast veg, top with fish, drizzle any juices.
