What you’ll need

  • 4 Mahi-Mahi fillets
  • 8 small corn tortillas
  • FOR THE MARINADE
  • Juice of 2 limes
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • Sea salt and freshly ground black pepper, to taste
  • FOR THE AVOCADO SALSA
  • 2 ripe avocados, diced
  • 1 large tomato, diced
  • 1 small red onion, finely chopped
  • Juice of 1 lime
  • Handful of fresh coriander, chopped
  • Sea salt, to taste

Let's Cook!

Step 1

In a bowl, whisk together the lime juice, olive oil, cumin, smoked paprika, garlic powder, salt, and pepper. Coat the Mahi-Mahi fillets in the marinade and let sit for 15-20 minutes.

Step 2

Preheat the grill to medium-high heat. Grill the Mahi-Mahi for about 4 minutes on each side until the fish is cooked through and has nice grill marks.

Step 3

While the fish is grilling, prepare the avocado salsa by combining the avocados, tomato, red onion, lime juice, and coriander in a bowl. Season with salt and gently toss to combine.

Step 4

Warm the corn tortillas on the grill for about 30 seconds on each side.

Step 5

Once everything is ready, assemble the tacos by placing a grilled Mahi-Mahi fillet on each tortilla, followed by a generous spoonful of avocado salsa.
