What you’ll need

  • 12 scallops in their half shell
  • 2 tablespoons of olive oil
  • 1 clove garlic, finely minced
  • A sprig of fresh thyme
  • A sprig of fresh rosemary
  • A small handful of fresh parsley, finely chopped
  • Juice of 1 lemon
  • Sea salt flakes, to taste
  • Freshly ground black pepper, to taste
  • A pinch of smoked paprika
  • Lemon wedges, for serving

Let's Cook!

Step 1

Preheat your grill to a medium-high heat.

Step 2

In a small bowl, mix the olive oil, garlic, lemon juice, smoked paprika, sea salt flakes, and freshly ground black pepper to create a marinade.

Step 3

Brush each scallop with the marinade, ensuring they are well-coated.

Step 4

Place a sprig of thyme and a small piece of rosemary on top of each scallop.

Step 5

Arrange the scallops on the grill, herb side up, and cook for about 3-4 minutes or until they are just opaque and have a slight char.

Step 6

Carefully remove the scallops from the grill, ensuring the herbs remain on top for presentation.

Step 7

Sprinkle with chopped parsley and serve immediately with fresh lemon wedges to squeeze over.
