What you’ll need

  • 500g plain squid rings
  • 2 tablespoons Marmite
  • 100g plain flour
  • 1 teaspoon freshly ground black pepper
  • 2 large eggs
  • Vegetable oil for frying
  • Fresh parsley, finely chopped, for garnish
  • Lemon wedges, for serving
  • **For the Triple-Citrus Mayo:**
  • 100g quality mayonnaise
  • Zest of 1 lemon
  • Zest of 1 lime
  • Zest of 1 orange
  • 1 tablespoon lemon juice
  • 1 teaspoon lime juice
  • 1 teaspoon orange juice
  • A pinch of cracked black pepper

Let's Cook!

Step 1

In a shallow bowl, whisk the eggs and Marmite together until well combined. In a separate bowl, mix the flour with the black pepper.

Step 2

Dip each calamari ring into the Marmite egg mixture, then dredge in the seasoned flour, ensuring an even coat.

Step 3

Heat a good amount of vegetable oil in a deep fryer or a deep pan to 180°C. Fry the calamari rings in batches for 2-3 minutes until golden and crispy. Remove with a slotted spoon and drain on kitchen paper.

Step 4

For the Triple-Citrus Mayo, combine the mayonnaise with all the citrus zests and juices, and season with a pinch of cracked black pepper. Stir until smooth and well blended.

Step 5

Serve the crispy calamari hot, sprinkled with chopped parsley and accompanied by the Triple-Citrus Mayo and fresh lemon wedges.
