The Fish Society's Tuna Sensation Sushi Rolls

- Sushi-grade tuna, 200g, sliced into strips
- 1 cup sushi rice
- 1½ tablespoons rice vinegar
- 1 teaspoon sugar
- ½ teaspoon sea salt
- 4 nori sheets
- ½ avocado, thinly sliced
- ¼ cucumber, cut into matchsticks
- 2 spring onions, finely sliced
- Toasted sesame seeds, for garnish
- Soy sauce, for serving
- Pickled ginger, for serving
- Wasabi paste, for serving

Step 1
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions.
Step 2
While the rice is still warm, gently fold in the rice vinegar, sugar, and sea salt. Spread the rice out on a tray to cool to room temperature.
Step 3
Lay a sheet of nori, shiny side down, on a bamboo sushi mat. Wet your hands and spread about ¼ of the rice evenly over the nori, leaving a small border at the top.
Step 4
Lay a strip of tuna, some cucumber matchsticks, avocado slices, and spring onion horizontally across the rice.
Step 5
Roll the sushi tightly from the bottom, using the mat to guide you. Seal the roll with a touch of water on the edge of the nori.
Step 6
Using a sharp knife, slice the roll into even pieces and sprinkle with toasted sesame seeds.
Step 7
Arrange the sushi rolls on a plate and serve with soy sauce, pickled ginger, and wasabi paste on the side.
