What you’ll need

  • 1 (10 ounce) fillet arctic char, rinsed and patted dry
  • Sea salt to taste
  • 1 lime, zested and juiced
  • ¼ cup olive oil
  • ¼ cup sherry wine
  • 3 sprigs rosemary, leaves stripped
  • 2 cloves garlic
  • ¼ teaspoon cayenne pepper, or to taste
  • Ground black pepper to taste

Step 1

Preheat oven to 400°F (200°C). Line a baking dish with foil.

Step 2

Season char with salt, place in dish, and sprinkle with lime zest.

Step 3

Blend lime juice, olive oil, sherry, rosemary, and garlic. Pour over fish.

Step 4

Season with cayenne and black pepper.

Step 5

Bake for 12-15 minutes, basting halfway. Broil for 2 minutes to brown.
