We source our rainbow trout from ChalkStream farms, which has a fantastic reputation in the UK. Their farms are built on the sites of old water mills which allow the fish to grow in a constant current which mirrors their natural river environment. Trout sashimi is not as well known as perhaps salmon, or tuna, but it definitely should be! The taste is delicate but delicious (some say a little nutty), and of course it does look stunning. With it's beautiful orange flesh and white marbling, it makes a wonderful topper for nigiri. This cut is much leaner than the belly sashimi, and it also has tonnes of healthy fats and omega-3, making it good for you as well as delicious. The perfect combination if you ask us!

Chalkstream trout have a low impact on the surrounding environment. They have been working to reduce the amount of marine-based feeds. Chalkstream also for Global Gap farming practices.
