Cobia

Cobia fish is a new fish to our range and indeed pretty new to mainstream cuisine. It's found in warm waters and grows to an impressive size - the world record specimen weighed in at 78 kilos. After a slow start in farming 20 years ago, volumes are beginning to grow and because it is farmed well offshore, the ecological impact is favourable compared with say, salmon. We have sourced some excellent large fillets which we cooked and enjoyed. A creamy flesh with big flakes which hold together well.
