Escolar

Escolar fish have big bulging eyes that look like spectacles. Hence the name, escolar being Spanish for "bespectacled academic brainbox" (more or less). But this fish's much bigger claim to fame is its high oil content. At 20%, this is off the chart, which means two things - 1) the rich buttery taste is divine and  2) escolar will probably give you the runs if you eat too much, as in two helpings instead of one. But don't miss one helping, because 20% oil tastes exquisite - take it from us.
