Ling is a shy and distant cousin of the cod. It's an Atlantic-only fish and has nothing to do with "lingcod" caught in the Pacific. It can grow to an impressive size. This one weighed 30 kgs and was two metres long. Shy as in quite solitary at sea and also shy as in not many people know about it, because it's not a big volume fish. Ling has leathery skin which we remove from our fillets and nice white flesh which you can treat just like cod. It should be said that it has a few extra bones but we have boneless cuts.
