Sea Trout99 people out of a hundred wouldn't be able to tell a sea trout from a salmon, and I'm equally happy with either. This lovely fish is a brown trout which has decided to go off to sea for a year or two. Once in salt water, its colouring changes to silver blue, leaving only the squarer tail shape and a slightly bigger paunch for experts to discern when it comes back to spawn. Supplies have been very challenging in recent years.
