Whiting is a smaller member of the cod family, rarely more than about a foot long and often a lot less (cod can reach six feet). It lives in all the same waters as the cod, from Norway to Portugal and has good sustainability credentials. Equally unfortunate was a style for serving it whole in a ring shape, the tail being pushed through the eye sockets. Madness. Stick to fillets. Here's a rehab job on the whiting, courtesy of The Spectator.
Local fishmongers are great, but where are they? Supermarkets have fish, it doesn’t make the cut! The best fish? We’ve got you.
