The witch or Torbay sole is found all around British coasts and further afield including Iceland, Canada and the Bay of Biscay. It has a pretty modest reputation - hence the price, but provides a decent meal without breaking the bank. We offer it whole, normally shorn of its tail and fins, and the quite sizeable head. It's not overfished and therefore has become quite popular with TV chefs.
