Caviar & Blinis Set – 30g Baerii, Blinis, Crème Fraîche & Spoon
- One 30g tin of fresh Baerii sturgeon caviar from Italy, a 135g pack of 16 mini blinis, a 170g pot of Coombe Castle crème fraîche and an 11cm mother-of-pearl caviar spoon
- Warm the blinis, add a teaspoon of crème fraîche to each, then a little caviar on top
- 30g tops all 16 blinis with a modest half-teaspoon each, which is canapés for four. Served on its own as a first course, it's enough for one (we'd allow 30–50g a head)
Baerii is the caviar we sell most of, and the one we'd suggest to a first-timer: Siberian sturgeon roe from a family-run farm in Italy that we've worked with for nearly ten years, sent fresh rather than frozen. Caviar isn't cheap, because a sturgeon takes years to mature before it gives any, so this set sends everything else you need along with it.
The spoon is mother-of-pearl because silver can taint the flavour of caviar (you get to keep the spoon, which is more than can be said for the caviar).
Keep the caviar and crème fraîche in the fridge. The caviar arrives with at least three weeks left on its best-before date, more typically eight, and once opened it should be eaten within 3 days.
If you'd like smoked salmon on a few of the blinis as well, our FishRJumpin smoked salmon is what we'd use. For a bigger party, the Blinis & Caviar bundle comes with a 50g tin.
