Sardines are an oily fish that fades fast once landed, so "fresh" sardines are often anything but. Freezing them soon after the catch locks in that just-landed flavour — which is why frozen sardine fillets so often beat the ones on the fishmonger's slab.
These are true Cornish sardines, caught by ring-net boats working out of Cornish ports, from a fishery certified sustainable by the Marine Stewardship Council. And because filleting a sardine yourself is a famously fiddly job, we've done it for you. The occasional tiny bone or scale may remain — these soften completely in cooking.
How to cook them
Sardine fillets need only a few minutes. Flash them under a hot grill or in a pan with olive oil, lemon and sea salt, skin side first. Wonderful on toast with garlic and a pinch of chilli, baked with tomatoes and herbs, or thrown on the barbecue. Defrost in the fridge before cooking.
Good for you, too
Sardines are one of the richest natural sources of omega-3 oils, along with protein, vitamin D and calcium.
