When removing the pin bones, it's best to use a sharp knife and remove then via a V-cut. Boning pliers yield only misery. Black cod has a high oil content which makes it uniquely buttery when cooked. It is often served in a miso marinade but there are many different ways to serve this fish. You could pan fry it and serve with a lemon pepper aioli, bake it with some olive oil, salt, pepper and saffron for a beautifully simple eating experience, or even grill it. No matter how you cook it, it's going to be a cut above any cod you've tried before.
