We typically get our hake from Cornwall or Scotland and fillet them in house, so it's all super fresh when it's frozen. The fillet portion cut is a beautiful tail-end cut that's a little less thick than the fillet steaks, but has no less flavour. Since they're a little thinner, they're not the ideal cut to put in the oven but they are wonderful if you pan-fry then. The skin get's delicious and crispy, and you can pair it with almost anything.

Our hake is typically from Cornwall, an MSC certified sustainable fishery. The fish are caught using gill netting which is selective in its targeting. We only buy large mature hake.
