This is a lumbering colossus (up to 100kgs) of the southern deep with divine white, buttery flesh. It's a low-calorie, protein-dense fish. As it's flesh is so dense, it lends itself well to being cooked any way you wanted and it's not likely to flake apart as you move it around. It's a wonderfully tasty and versatile fish to try new things with.
