The blue belly is in fact the eggs of this excellent prawn. Now before you protest about eating prawn eggs, please be aware that these prawns (like many other prawn species) are prolific breeders typically producing three broods a year and therefore their blue bellies are a more-or-less permanent feature. The fishing in the Med is controlled by the EU and therefore with sustainability high on the agenda.
Those eggs are an exquisite blue and although care is required to extract them, it’s well worth the trouble as they taste excellent.
These are about the size of North Atlantic prawns but whereas those always come cooked, these blue bellied shrimp are definitely always raw and eating them thus is an exciting experience.
