Butter-Basted Halibut Cutlets

Butter basted halibut cutlets cooked with a mixture of butter, garlic, capers, lemon and thyme.

What you’ll need

  • 400g scottish halibut cutlets
  • 2 tbsp oil
  • 113g unsalted butter
  • thyme
  • 3 garlic gloves, peeled and crushed
  • 2 tbsp drained capers
  • 1 x lemon

Let's Cook!

Step 1

Season halibut steaks generously with salt and pepper. Heat oil in a large skillet, preferably cast iron, over medium-high heat until beginning to smoke. Cook halibut until golden brown, 6–8 minutes. Turn and cook until the other side of the fish is golden brown, about 4 minutes longer.

Step 2

Add butter, thyme sprigs, and garlic to pan and cook, tilting pan and spooning butter over fish, until halibut is opaque throughout and butter is brown, about 2 minutes. Add capers and lemon juice, toss in butter to warm through. Serve with butter sauce and seasoned vegetables.
