Crisp Nori-Wrapped Scallops with Ponzu Dressing

What you’ll need

  • 12 large sea scallops
  • 6 nori seaweed sheets, cut in half
  • 1 tablespoon vegetable oil
  • 1 tablespoon sesame seeds
  • 3 tablespoons ponzu sauce
  • 1 teaspoon orange zest
  • 2 spring onions, finely chopped
  • Sea salt and freshly ground black pepper, to taste

Let's Cook!

Step 1

Pat the scallops dry with kitchen paper and season both sides with salt and pepper.

Step 2

Heat the vegetable oil in a pan over high heat until very hot. Sear the scallops for about 1-2 minutes on each side until golden brown and just cooked through.

Step 3

Wrap each scallop with a piece of nori seaweed sheet, sealing the edges with a few drops of water if necessary.

Step 4

In a small dry pan, toast the sesame seeds over medium heat until golden, then set aside.

Step 5

Arrange the wrapped scallops on a serving dish. Drizzle with ponzu sauce, sprinkle with toasted sesame seeds, orange zest, and chopped spring onions.

Step 6

Serve immediately, offering an elegant blend of textures and the umami-rich flavour of the sea, accented by the tangy ponzu sauce. This appetiser is perfect for special occasions or as a luxurious treat for seafood lovers.
