- 12 large sea scallops
- 6 nori seaweed sheets, cut in half
- 1 tablespoon vegetable oil
- 1 tablespoon sesame seeds
- 3 tablespoons ponzu sauce
- 1 teaspoon orange zest
- 2 spring onions, finely chopped
- Sea salt and freshly ground black pepper, to taste

Pat the scallops dry with kitchen paper and season both sides with salt and pepper.

Heat the vegetable oil in a pan over high heat until very hot. Sear the scallops for about 1-2 minutes on each side until golden brown and just cooked through.

Wrap each scallop with a piece of nori seaweed sheet, sealing the edges with a few drops of water if necessary.

In a small dry pan, toast the sesame seeds over medium heat until golden, then set aside.
