Grapefruit, ginger and soya dressed crab with avocado

What you’ll need
- 1 whole cooked crab
- 1 ripe grapefruit, diced
- 1 tbsp lazy ginger
- 1 tsp fish sauce
- 1tbsp soy sauce
- juice and zest of one lime
- 1 tbsp mayonnaise
- rocket leaves
- ripe avocado
Break down the crab and pick the meat keeping the white meat separate for the brown and the crab shell for presentation. You can find video tutorials on how to do this on youtube.
In a bowl with the white meat combine the grapefruit, ginger, fish sauce, soya and juice of the lime, stir gently to evenly coat everything
In a bowl with the brown meat stir in the mayonnaise and lime zest, season generously with salt and pepper
Arrange the rocket on a plate and sit the crab shell on top. Spoon the brown meat mixture into the bottom and follow with the white meat and mango mixture. Finish with wedges of avocado and lime.
