Pan-Seared John Dory with Lemon & Herb Butter

What you’ll need

  • 2 John Dory fillets
  • 1–2 tbsp olive oil
  • Salt & freshly ground black pepper
  • 1 lemon (zested + juice)
  • 30g unsalted butter
  • 1 small handful fresh parsley, chopped
  • Optional: steamed new potatoes or baby vegetables to serve

Let's Cook!

Step 1

Pat the John Dory fillets dry with kitchen paper. Season lightly with salt and pepper on both sides.

Step 2

Heat olive oil in a non-stick frying pan over medium-high heat. Place the fillets skin-side down and cook for 2–3 minutes until the skin is golden and crisp. Carefully turn the fillets and cook for another 2 minutes, until just cooked through.

Step 3

While the fish cooks, melt the butter in a small pan or in the microwave. Stir in lemon juice, lemon zest, and chopped parsley.

Step 4

Place the fish on warm plates and drizzle over the herb butter. Serve immediately with steamed vegetables, new potatoes, or a simple green salad.
