What you’ll need

  • 500g sashimi grade salmon
  • Zest and juice of 1 lemon
  • 1 tbsp chopped dill
  • 1 shallot, finely sliced
  • 1 tsp sugar
  • 1 tbsp extra virgin olive oil
  • 1 tbsp capers, drained
  • Salad leaves and crusty bread to serve

Step 1

Pour the lemon juice into a bowl and add the zest, chopped dill, some shallots, sugar, salt and olive oil. Mix together well

Cut wafer thin slices of the salmon and arrange on a large sharing plate or individual smaller plates

Drizzle the marinade over the salmon slices, making sure to coat each slice.
