Salmon fillets with egg and chips
Salmon is always a wonderful treat, however this recipe really takes it to the next level. It's lovely and light, with delicious flavors. Perfect for a summer lunch or dinner.
BUY ORGANIC SALMON FILLET STEAKSWhat you’ll need
- 2 salmon fillets
- 2 eggs
- 1/2 pineapple
- 60g chorizo
- 50g butter
- chips to serve
Let's Cook!
Step 1
Dice the chorizo and heat along with the butter in a non stick, ovenproof skillet until the oils are melting from the chorizo and the butter is turning a burnished orange.
Step 2
Add the salmon fillets, skin side down and place in the oven for 12 - 15 minutes depending on how you like your salmon cooked
Step 3
Whilst the salmon cooks char wedges of pineapple until caramelized and charred and gently fry an egg until just cooked but still runny.
Step 4
Plate the salmon with a spoon of chorizo butter, the pineapple wedges, the fried egg and some golden chips.
