What you’ll need

  • 12 large king prawns, shelled and deveined
  • 12 slices of Palma ham, thinly sliced
  • 1 teaspoon of smoked paprika
  • Zest of 1 lemon
  • Freshly ground black pepper, to taste
  • Olive oil, for drizzling
  • 12 wooden skewers or cocktail sticks
  • Optional: A drizzle of honey for a sweet contrast

Step 1

Prepare the prawns by patting them dry with kitchen paper. Season with smoked paprika, lemon zest, and freshly ground black pepper.

Step 2

Lay a slice of Palma ham flat on your work surface. Place a seasoned prawn at one end and roll it up tightly in the ham.

Step 3

Secure each prawn with a skewer or cocktail stick to keep the ham in place.

Step 4

Heat a frying pan with a drizzle of olive oil over medium-high heat. Once hot, add the wrapped prawns and cook for 2 minutes on each side or until the prawns are pink and fully cooked, and the ham is crisped to your liking.

Step 5

Optional: For a hint of sweetness, lightly drizzle honey over the prawns during the last minute of cooking.

Step 6

Remove from the pan and serve immediately. The prawns can be presented on the skewers for easy enjoyment.
