There are many kinds of sea bream fish including both freshwater and sea fishes. The word refers to the shape of the fish more than to a particular family. The bream with the biggest gastronomic reputation is the gilt head which is rare in the wild but farmed in vast quantities in Greece and Turkey. We sell this as both fillets and whole portion-sized fish. From time to time we also have the black bream and the beautiful blue spotted bream. All make excellent eating.
