The terms Imperial and Royal as applied to caviar mean, of course, less than nothing. As if to emphasise the point, we call our varieties just Number 1 Baerii, Number 2 Oscietre, and Number 3 Beluga x Baerii.
Sadly, the sturgeon is now all but extinct in the wild. But it’s farmed in increasing quantities and quality. Our caviar comes from a small farm in northern Italy, family-owned and operated. We have been there, been around it, know them well and love what they do.
