New Zealand Snapper

It looks like a snapper and it's called a snapper, but fish scientists in fact say the New Zealand snapper is not a member of the main snapper family. It's fished off Japan, Australia and New Zealand but particularly associated with NZ, where it's almost the national fish and much favoured by rod fishermen for whom a massive 30% per cent of the total allowable catch is reserved. It has excellent white firm but flakey flesh.
