We have two grades - the best hand-cut by us from fresh loins flown in from the Indian Ocean. Or choose more economical processed-at-source swordfish steaks from Viet Nam. Both have dense white meat, reminiscent of pork. Brush with oil, scatter a few herbs and grill or BBQ briefly for a top-grade eating experience.
