A branch of the salmon family, it arrived here long ago from the USA and is farmed in dozens if not hundreds of farms all over the UK both for the table and for fishing waters. It's harvested at the perfect size to serve whole, and grilling or baking will give you a perfect result. It's also very popular smoked, in which case you can choose fillets.
