Yellowtail Kingfish

Yellowtail kingfish is a fabulous fish from the warmer southern oceans. It grows to a good size and has excellent eating qualities, with just a touch of oiliness in its white flesh. Very popular in sushi bars, where it is known as 'hiramasa', Ours come from Australia, where they are farmed in large quantities, but such is the demand from Japan that the price is very firm. Yellowtail kingfish is also excellent grilled or BBQ'd.
