Japanese-inspired dinner for two
Omakase means "I'll leave it to you," which is the right name for a pack that does most of the thinking on one half and leaves the other half entirely up to you. Black cod isn't cod at all — it's sablefish, hauled from cold northern water, and it carries so much natural fat that it's almost impossible to overcook. That's the whole trick behind the miso marinade too: it's a Nobu dish originally, copied onto tasting menus everywhere at forty-odd pounds a plate, and the fish does most of the flattering itself.
We confess it isn't cheap — the boats are a long way off and there aren't many of them. But you're getting two different ways into the same excellent fish: one that needs nothing from you, and one that lets you show off a bit.
