Frutti di Mare Seafood Pasta Box - Serves 4-6
- A kilo of white clams (about 50), a kilo of Irish mussels, 600g of cleaned squid tubes and 250g of XXL raw king prawns
- Clams and mussels go into the pan from frozen with a glass of white wine and a lid; squid and prawns go in for the last two minutes
- Serves four generously, six if there's bread
In the box: only the items listed above. Anything else in the photo is a serving suggestion, so the pasta, wine, garlic, parsley and bread are not included.
Frutti di mare is just whatever the boats brought in, cooked fast with garlic, wine and a lot of parsley. We've done the shopping: two shellfish that steam open and give you the sauce, squid for texture and prawns because everyone looks for them first.
Slice the squid into rings no thicker than a pound coin and cook it for no more than two minutes, or for over an hour. Anything in between is rubber. (We speak from experience.)
