Our Montesión Sauvignon Blanc benefits from Mallorca's maritime influence, with cooling sea breezes that help preserve the grapes' natural acidity, resulting in a wine with remarkable freshness and balance. This biodynamic approach not only nurtures the vineyard ecosystem but also enhances the purity and vitality of the grapes.
Aged in oak barrels, known as "barriques," our Sauvignon Blanc undergoes a meticulous process that adds layers of complexity and texture. The oak imparts subtle notes of vanilla, toast, and delicate spice, which beautifully complement the wine's inherent fruitiness. This aging process softens the wine's acidity, creating a more rounded and layered profile.
Perfectly suited for pairing with seafood, salads, and light poultry dishes, or simply enjoyed on its own, Montesión Sauvignon Blanc offers a sophisticated and multifaceted tasting experience. TYPE: Young white wine.
HARVEST: 2023. The grapes were harvested on 12 August, when there was no rain throughout the month and it was mild, which favoured perfect health and ripening of the grapes.
ALCOHOLIC GRADE: 13.5% vol.
WINEMAKING PROCESS: Grapes selected and harvested by hand in vineyards located in Porreres (Mallorca - Balearic Islands). Traditional winemaking methods, without the addition of yeasts or bacteria (according to conditions defined by DEMETER INTERNATIONAL). Spontaneous fermentation and vinification took place in stainless steel tanks.
APPERANCE: Bright, bright, yellow with greenish tones. The tearing of the glass is visible.
NOSE: Very high intensity with balsamic and heathery aromas, characteristic of the Sauvignon Blanc variety.
PALATE: It is a fresh, velvety wine, with a lot of volume and balance.
FOOD PAIRING & HARMONY: Fish, pasta and rice dishes. Also as an aperitif.
