This is a very nice piece of fish. It's similar to what we call a fillet steak, but didn't quite make the grade, thickness-wise. But same fish, same flavour. Produced from ultra-fresh cod landed at UK or Icelandic ports then rushed to us for processing. Vac-packed in pairs of matching shape and weight.

Almost always this cod is line-caught from Iceland, an MSC certified sustainable fishery. Iceland has made fantastic progress in the management of their fisheries since near collapse in the 1970s. Iceland has gone through multiple successful sustainability recertifications processes. We use large mature cod for this cut.
