They’re not as thick as the steaks from the top fillet, but they are nevertheless very handsome pieces of fish, and rich in the natural oils which are always concentrated in the belly flesh. Gourmets might consider this the most desirable cut of this superb fish, Despite the downside - the belly flesh is rarely worm free. But the worms are truly frozen to death and cannot hurt you. Our Black Cod is line caught in Canada. This is a good choice for several reasons; the stock is healthy, overfishing is a low concern and the impacts to the sea floor as a result of fishing is minimal. There are further policies in development to protect the ecosystem.
