Black Cod is undeniably one of the finest fish in the sea. It has a buttery/silky taste due to it's high oil content. You might know it as Sablefish. It comes from fisheries in Alaska and Canada and there is a fascinating 30-year long tale of sustainable fishing and morality associated with them.
Of course when it comes to Black Cod, everyone always thinks of the famous recipe from Nobu, and this would be a great cut for it. It comes from the top of the neck which gives you a luxurious thick piece of fish and it can be used many different ways. Because it is such a decadent fish, we usually just have it simply pan fried with some veg and potatoes. Yum!

Our Black Cod is line caught in Canada. This is a good choice for several reasons; the stock is healthy, overfishing is a low concern and the impacts to the sea floor as a result of fishing is minimal. There are further policies in development to protect the ecosystem.
