Crispy baby octopus deep fry with a refreshing pineapple salsa. A lovely recipe to share or the perfect starter for a summer dinner.

Crispy baby octopus with chilli and pineapple salsa

Crispy baby octopus, a lovely starter with a Caribbean pineapple salsa. Lovely and really easy.

Ingredients

400g baby octopus

200g self raising flour

tin of pineapple in juice

1 red chilli

Handful of coriander

3 limes

vegetable oil for frying

Cooking steps

Step 1

Half fill a large saucepan with vegetable oil and heat.
Put the flour in a large bowl with a good pinch of salt and pepper and toss the octopus in the flour until well coated.

Step 2

Finely dice the pineapple, chilli and coriander and combine with the juice of 1 lime in a small bowl

Step 3

When the oil is hot shake the excess flour off the octopus and place in the oil in batches - fry for 1-2 mins until lightly golden and crispy

Step 4

Serve immediately with the pineapple salsa and lime wedges
